Peanut Butter Chocolate Chip Cookie Dough Cupcakes

I love my husband's birthday.  My family always gave the birthday girl/boy full dibs on what we would do and eat throughout the day.  I really enjoyed it, because it meant the day was all about me!  :)  But it was a lot of pressure trying to figure out what to do.  And for me, a full-time people pleaser, it was stressful trying to come up with something that I really wanted, but also something that everyone else would enjoy too.  Lots of fun, and lots of pressure. 

But Blair's family was opposite.  They had to come up with things that they thought the birthday boy would want and surprise him with it.  I love this idea, because then it a) takes pressure off the bday person and b) makes your loved ones think really hard about you and what you would like.  And yet, as much as I love the idea, when it comes time for Blair's birthday, the pressure is all on me again!!  Ack!

But it sure is fun day dreaming about all the things that might make my babe happy!

My husband is addicted to the flavour combination of peanut butter and chocolate.  I have to admit, I'm a huge fan as well.  However, he is a "Hello My Name is..." kind of addict.

Therefore, I'm always on the hunt for good recipes to surprise him with.  I think he has a sixth sense about it too, because he seems to find a way to come home early on days when I bake a yummy treat.

I found one at a great blog called Gimme Some Oven, and I just HAD to try it (with a few adaptations of my own, because I'm a rebel and can't simply follow directions without experimentation).

Ingredients
For Cupcakes:
1 box of Triple Chocolate Cake mix
1 cup of buttermilk
1/2 cup of unsweetened applesauce 
4 eggs
For Frosting:
1 1/2 sticks of butter, room temperature
1 cup of brown sugar, packed
1/2 cup of granulated sugar
1/2 cup of peanut butter, creamy
1/2 cup skim milk
1 tablespoon of buttermilk
1 teaspoon of vanilla
2 1/2 cups of all purpose flour
1/2 teaspoon of salt
1 1/4  cup of mini semisweet chocolate chips, chilled for at least 30 min prior

Directions
Preheat oven to 350 degrees. Line 24 muffin cups with paper liners, and spray them with cooking spray.

Beat cake mix, buttermilk and applesauce with an electric mixer on low/medium speed until moistened (about 30-60 seconds).  

Add eggs one at a time, until the batter is well-mixed.  Increase speed to high and beat until thick for about 2 minutes.

Scoop the batter into the paper liners until they are about 2/3 full (I used a 1/3 measuring cup, which worked well). 

Bake for 15-20 minutes, remove from the oven and let the cupcakes cool on a wire cooking rack.  

While cooling, make the frosting...

Using an electric mixer (this is where I wish I had TWO mixer bowls so I wouldn't have to do the dishes in the middle of baking. sigh), beat the butter and both sugars together until fluffy.  Then mix in the peanut butter, vanilla, and skim milk.  

Add flour and salt, on low speed until mixed well.  Stir in chocolate chips (with a spoon by hand, so as not to crush them with the mixer).

Frost cooled cupcakes with "cookie dough" mix.  You can use a piping bag to do this, but for these cupcakes I think it works best to frost them messily with a spoon.
Then devour the scrumptious goodies, that you will crave day after day.  Sorry about that...sorta.
